GLUTEN FREE RHUBARB CAKE
Rhubarb and strawberry is what summer tastes like. This buttermilk cake with fresh fruits and berries, vanilla, sea salt and lemon juice is ideal for the season. It may be gluten-free but is still loaded with flavour and has the perfect texture.
MINI ALMOND BUNDT CAKES
If you want to serve something that looks as good as it tastes, these mini bundt cakes are exactly what you're looking for. They're sweetened with clementines, maple syrup and vanilla extract and actually taste like sunshine.
MEYER LEMON TART
A lemon tart will refresh and revive you during the hottest days of the summer. The crust in this tart is made with buckwheat flour, which gives it a rustic touch and compliments the sweet lemon curd perfectly.
SALTY TAHINI CHOCOLATE COOKIES
These updates of the classic oatmeal cookies are free from gluten, dairy and white sugar. But don't let that scare you away! The unexpected ingredient (tahini – which is sesame seed paste) merges perfectly with the salty chocolate and makes them both crunchy and chewy.
DAIRY-FREE POTS DE CRÈME
This decadent dessert is the perfect way to end a three-course dinner. Traditional recipes for pots de crème include lots of cream. Here, the cow milk is replaced with coconut milk and some added lavender buds give it a summer-fresh flavour.
